Blast freezing is a type of freezer storage that rapidly brings down the temperature of uncooked or fresh food products, freezing it very quickly to lock in the taste and nutrition of the food for optimum quality for consumers.
When you freeze food, the water inside crystallizes into ice. The longer the freezing process takes, the larger the ice crystals can form. Larger ice crystals damage will affect the quality and flavor of foods.
Blast (rapid) freezing causes the formation of tiny crystals, which do minor damage and preserve food at a higher quality. Even more usefully, once the food is "blast frozen," it can be moved into a standard cold freezer environment for longer term storage because it stays cold enough for the food at the correct temperature.
Blast freezing is widely use in the cold/frozen food industry, pre-prepared meal, vegetables, meat, or fish. At Frez-N-Stor, we are adaptable to the needs of our customers and there is no limit to the industries that can benefit from blast freezing.
